Made this recipe twice in the past few days and the sauce you get is really great, so creamy and comes together quick! I’ve just been using tomato paste. Tip: don’t overdo it on the breadcrumbs when plating otherwise they’ll soak up too much of the sauce and you’ll get a bad texture. Let the sauce shine.

Love to hear this! We did it with 1tbsp of gochujang and 1tbsp tomato paste 2 nights ago and it added to the umami without overdoing it.

Red miso is a v intriguing idea

Better part of 2 hours though??? Feel like it takes us a little over an hour

Haha, yes. One hour seems accurate. Although that eggplant did NOT want to bake, I should’ve mentioned that we did the eggplant separately earlier in the day. Next time we'll focus our multitasking skills on the food prep 😅

We opted for the tomato paste-route and a sprinkle of chili flakes, as it felt right to get down with the basics first. But we'll be bold and try cheffing it up with some gochujang next time. (Also thinking that red miso might be worth trying)

And yes, it was absolutely worth it, scorching away in front of the oven and over boiling pots and pans for the better part of two hours in humid 27°C/80°F – sans AC

We are excited to make this tonight as we're in the middle of a cold snap. But how can the recipe of the summer require 40-50 minutes of oven time... Think of all the AC needed to offset that heat!

Ally Capallino did a Tate colab which was nice, or Florian Gadsby did one with Yorkshire sculpture park, though that was mainly for pottery I believe.

Or pick one up from your local kitchen supply shop.

I had been cooking happily in a beat up Marimekko for the past 15 and I would have agreed that you don’t need a garment that feels like the lead blanket they put on you at the dentist for X-Rays but reader…you do. It is such a weighty, sensual experience that is so nice in winter and adds structure to whatever you have on underneath. I have the dark denim one and it is one of my favourite pieces of clothing.

Further, I wrote the guy who made it about how to wash it and he’s one of those “denim people” who want you to hand wash your apron in mild soap and hang it to dry. An apron?! Are you out of your GD mind?!

I suppose I don’t need to tell you that my love for this thing is such that I am now one of those “denim people” who hand washes my apron in mild soap and hangs it to dry.

If someone has any interest in learning how to sew (have a sewing machine a friend gave you when they moved but you've never used?) an apron is an ideal first project to build your confidence.
